Fat Tuesday a la Sweden: Semlor

You think bright color bead necklaces and crazy carnival outfits are what Fat Tuesday is all about? Think again.

In Sweden there’s a different tradition, and it carries on all the way from January to March: semlor. A semla (plural: semlor) are wheat-flour bun filled with almond paste and topped with whipped cream and powdered sugar; the perfect combination for fending off the cold of winter. Traditionally eaten on Fat Tuesday, now you can find them in Swedish pastry shops and bakeries from the beginning of January onwards.

Or you can make your own. Here’s a great recipe to bring all the semla goodness right into your own home. I know what I’m doing tonight!

Foodie Blog to Check Out: Sprouted Kitchen

I wrote an article this week for EcoSalon on 10 delicious vegetarian soups. In doing so I came across an absolutely beautiful and well written blog, The Sprouted Kitchen. Somehow the talent at this blog makes whole grains look sexy… I’m not kidding. In fact I’ve never found anyone else that has an affinity for taking photos of quinoa, so when I came across it, I knew I’d be an instant addict.

Here’s the soup recipe I chose for EcoSalon: Lentil Soup with Chipotle Yogurt. Can’t wait to get this cooking in the kitchen.

Ingredients:

2 Cups Lentils (French or Black Beluga)
1 Yellow Onion, Diced
1 Fennel Bulb, Diced
1 tbsp. Olive Oil
1 Cup Brown Rice, Cooked (any whole grain will work)
6 Cups Organic, Low Sodium Vegetable Stock
1 tsp. Cumin
1 Large Bunch of Kale, Chard or Combo of Leafy Greens
Salt/ Pepper
1 Lemon

Chipotle Yogurt
1 Cup Plain Greek Yogurt
1 Chipotle Chile in Adobo, Chopped (no more than 2 tsp.)

Preparation:

1. Cook your rice or desired grain and set aside. Boil about four cups water, and boil the lentils for 20 minutes until cooked. Add water as needed. Drain.
2. In a large soup pot, saute the yellow onion and the fennel in the olive oil for about 8 minutes, or until just starting to turn light brown. Add the stock and cumin. Bring the heat back up to a gentle boil, about 10 minutes.
3. Add the lentils and the brown rice and simmer about 10 minutes. While you are waiting, stem your greens and slice them into thin strips. Taste the soup for salt and pepper, add seasoning as desired.
4. Turn off the heat and add in the greens, stir. The greens will wilt in the hot soup, and avoid overcooking this way. Stir in the juice of half the lemon, add more to taste.
5. Mix the greek yogurt with the chipotle chile and stir. Serve the soup with the dollop of the chipotle yogurt. Warning, chipotles are pretty spicy, so start with a small amount of sauce and you can add if you like it hot. If too spicy, add more yogurt.

Sunday Morning Scones

There’s a beauty in the simplicity of Sunday mornings. Coffee, newspaper and NPR in the background. These scones are a perfect addition. The recipe is adapted from Sheila Lutkins’ Dorset Scones in All Around the World.

  • 2 cups flour
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 8 tablespoons unsalted butter, chilled + cut into cubes
  • 1 egg
  • 1/2 cup milk
  • 3/4 cup dried currants
  • 1/2 sliced, toasted almonds

1. Mix flour, baking powder, sugar, salt and nutmeg. Add cold butter and mix together until it resembles coarse meal. [Easiest way to do this is in a food processor, but using your hands to do the job works just fine!]

2. Whisk egg in small bowl and mix together with milk. Add to flour mixture and mix until dough forms large curds.

3. Knead in currants and almonds.

4. Make two round balls and flatten on greased pan. Cut each round into eighths.

5. Preheat over to 450F, bake for 15 min.

Keen on quinoa…

I finally went for it and started a food blog; I had to do something constructive with all of those food photos I was taking. But it isn’t your average food blog — it’s solely devoted to quinoa. I know there are plenty of my friends out there contemplating whether or not I have lost my mind because I seem so obsessed with a grain, but I like to think of it as a way to come up with a lot of new and creative ways to play with the hard-to-pronounce food.

Portland Farmers Market makes #1

Good Magazine — remember how much I love them? — put together a list of the five best farmers market, and Portland scored the top spot! It’s no surprise really, we Portlanders certainly are obsessed with our locally grown organics… Just look at the graphic; 14,000 visitors is a lot and that’s why it’s important to get there early in order to minimize the elbow throwing to get the best strawberries.

Other market’s that made the list:

  • Ferry Plaza Farmers Market, San Francisco
  • Dane County Farmers Market, Madison
  • Boulder Farmers Market, Boulder
  • Union Square Green Market, NYC

It’s nice to know that my city of residence tops the list… Here’s the key to the graphic:

Summer edibles

The arrival of summer means two very important things: I can drink coffee on the back patio and I can start making my favorite seasonal meal. It’s not extravagant, but it is the epitome of summer: salmon, potatoes, asparagus and tsatsiki.

And with the new camera, I just can’t stop taking food pictures… maybe this should turn into an epicurean blog…

Along those lines, here is my killer recipe for summer tsatsiki:

1 1/2 cup goat yogurt

1 cup thinly sliced/shredded cucumber

1/4 cup cilantro

1/4 cup chopped pecans

1 teaspoon olive oil

dash of salt and pepper
